    The Veganista's Note:

    A very simple, versatile quesadilla using corn tortillas. Add anything you'd like such as spinach, onion, or bell peppers. You can also top with vegan, dairy-free, sour cream and salsa.

    Ingredients:

    Units: US | Metric

    • 6 corn tortillas
    • 1 (8 ounce) package cheese (Daiya cheese works best)
    • 1 stick Earth Balance natural buttery spread
    • 1 dash salt (optional)

    Directions:

    1. 1
      Heat skillet, medium setting.
    2. 2
      Spread butter onto both sides of each corn tortilla.
    3. 3
      Place one corn tortilla onto skillet.
    4. 4
      Add 1/4 cup cheese, or less if desired.
    5. 5
      Place another tortilla on top.
    6. 6
      Heat through until tortilla underneath is lightly browned.

      Flip and brown the other side.

      Remove from heat.

      Sprinkle with salt if desired.
    10. 10
      Repeat steps.
