Tomato and Apple Soup (Dairy Free Gluten Free)

"This is a really delicious soup that I got from the Gluten Free Club. It didn't give the servings, but I doubled it and it filled my standard soup pot, so I'm figuring 5 (1 cup) servings for the regular recipe. I adjusted the recipe a bit to add a little more seasoning. You could make it "cream" of tomato by adding cooked cauliflower in before pureeing. I also seeded the tomatoes after skinning (so I didn't have to sieve it)."

  • Core the tomatoes and slice a shallow X in the opposite end.
  • Place the tomatoes in boiling water for 2-3 minutes then in cold water. The skins will peel off easily.
  • Cut up the tomatoes. Peel and cut up the onions and apples.
  • Place all ingredients in a stock pot, bring to the boil and simmer for 20 minutes until the onions are soft.
  • Puree the mixture and then sieve to remove the tomato pips. The soup should be completely smooth. serve hot garnished with chives and cream, if desired, or chilled.

I am a Christian wife and mother of 3 kids. Since my DH's high cholesterol, we've been eating better. I never used to like cooking. Since eating better, I've liked learning and preparing new recipes. My kids haven't reconciled themselves to the new eating yet. I grind my own grain and make all my own breads.?Working 2 hours a day in the local high school lunch room.??I am homeschooling my high schooler.? ?Also found out 1 child has multiple food allergies (wheat, dairy, tomato, chocolate, etc) and another is gluten sensitive. So, we just started (July 09) eating gluten and dairy free. I've been busy with getting our house market ready, even though it's not the best time for that.?
