directions

  • Heat oven to 350°.
  • Mix flour, sugar, cocoa, baking soda and salt with fork in an ungreased square pan. (Add the coffee powder here if you've opted for that flavor.).
  • Mix in remaining ingredients. Bake 20-25 minutes (but I don't mind it if it's still a bit moist in the middle).
  • Either top with powdered sugar for a snacking cake or melt bittersweet chocolate with a bit of honey to make a fancy glaze.

  1. My kids are gluten free in addition to vegan. I used Bob's Red Mill all purpose baking flour and xanthan gum as suggested with the flour. I make this cake for all my kids birthdays now.

  2. I baked my cake for 30 min and the edges were burned and the middle was still way under done. Was totally disappointed with this cake!!!!!

  3. This was a very good cake... i doubled it and it was totally great. It was a bit spongie and I had a lot of compliaments from my guests and they had doubles and scraped the plate!! I thought it was like the Cadbury cake... I am a celiac and used different flour so this may have been the reason mine was so yummy and moistured. 100 out of a 100. You have got to try it. Amazing that you dont have to use eggs or milk since I had no eggs and dessert to make!

Hello, I am an American from ND that has been living off and on in France (the south) for the last 20 years. The produce and meat and dairy here are amazing but I do come back from home with suitcases of American goodies. I like to read and cook and try to impress French people with my dishes (and so far so good :-). I work at home doing translations, web site pages for International companies. My passions are : my beautiful 14 year old daughter, my beloved guinea pig Daisy, reading detective novels written by women, cook books and cooking. I also have a huge collection of Fine Cooking, Gourmet and Bon Appetit! My favorite cookbooks are OLD! I have a 1948 Farm Journal Homemade Cookies that is priceless, the BEST brownies in the world and so far, the world has voted yes! I have a Fanny Farmer from 1964, my mom's Joy of Cooking from 1967. I have lots of new ones but they just get a bit fancy for me. My pet peeves? :-) Stale cookies, crackers and chips, food that is cold when it's supposed to be hot and visa versa! People who are late and don't call!
